Albuquerque Green Chile Stew

Albuquerque Green Chile Stew
 

Albuquerque Green Chile Stew, john mccormack, mccormick, albuquerque homes realty

Cook Time: 1 hour

Total Time: 1.5 hour

Yield: Serves 6

Ingredients:

 

  • 2 pounds of cubed pork / beef chicken can be used most prefer pork
  • 1 pint canned tomatoes / vine ripe tomatoes can be used
  • 2 cups cubed potatoes / red or white
  • 1 cup diced onion
  • 1 TBL minced garlic or garlic salt or powder / optional
  • 2 cups roasted, peeled, chopped green chile / or to taste

Preparation:

Put 5 or 6 cups of water in a pot and put in the meat. Boil until done.
Add the potatoes and simmer until they are soft when pierced with a fork. Add the other other ingredients and simmer for about 15 to 20 minutes more. Add salt and black pepper to taste.

*We prefer to brown the meat before adding to the stew.  Use fresh chile if available, frozen if not.  Costco carries a good quality frozen chile.


Albuquerque Green Chile Stew can be cooked in a Crock Pot too.  A simple and tasty  meal.... Enjoy Albuquerque Green Chile Stew with a warm tortilla, cornbread or crackers.

The stew is from the Mrs. Roger.... I'm the tester :)   Roy Kelley requested the Green Chile Stew. 

Debbie is going to share her easy to make apple or could be cherry pie recipe with the class soon. It's so good we had some for breakfast.

WOW...I've never put potato in it before. That sounds good, and would make it extra filling. I also like the crockpot idea. Now that my personal chef works nights, cooking for other people, my crockpot gets quite a workout.

John Loved the Recipe, I cook in our house hold, when Diane cooks we go out to dinner:) I must make this recipe as soon as it cools down, we are having a heat wave here in Marina Del Rey, heat and humidity...one of the reasons we left the East Coast:)))

John,  Oh my that sounds soooo good.  I really have to get some Hatch Chiles this year, my freezer is empty!  :(  I will try the recipe when I have it.  For football yesterday I made Chicken Mole,  turned out pretty good!  Best to you.  PS:  I like the recipe club idea!!

I LOVE GREEN CHILI STEW :)!  I make it every year, but I use beef and lots of garlic and onions.  I have to get my Green Chili from HEB here when they have their Hatch Green Chili Festival.
