Albuquerque Green Chile Stew
Cook Time: 1 hour
Total Time: 1.5 hour
Yield: Serves 6
Ingredients:
- 2 pounds of cubed pork / beef chicken can be used most prefer pork
- 1 pint canned tomatoes / vine ripe tomatoes can be used
- 2 cups cubed potatoes / red or white
- 1 cup diced onion
- 1 TBL minced garlic or garlic salt or powder / optional
- 2 cups roasted, peeled, chopped green chile / or to taste
Preparation:
Put 5 or 6 cups of water in a pot and put in the meat. Boil until done.
Add the potatoes and simmer until they are soft when pierced with a fork. Add the other other ingredients and simmer for about 15 to 20 minutes more. Add salt and black pepper to taste.
*We prefer to brown the meat before adding to the stew. Use fresh chile if available, frozen if not. Costco carries a good quality frozen chile.
Albuquerque Green Chile Stew can be cooked in a Crock Pot too. A simple and tasty meal.... Enjoy Albuquerque Green Chile Stew with a warm tortilla, cornbread or crackers.

Pretty hungry now.
Wow! This sounds wonderful- I'm going to try it this week. Thanks for sharing!
Your recipe Q Man, or the Mrs.?
John, Sounds delicious but can't make it because my hubby doesn't like hot peppers, even though chiles aren't really hot. Too bad.
The stew is from the Mrs. Roger.... I'm the tester :) Roy Kelley requested the Green Chile Stew.
Debbie is going to share her easy to make apple or could be cherry pie recipe with the class soon. It's so good we had some for breakfast.
John, I'm sitting here eating an Amy's frozen dinner cheese enchilada, black beans and corn and you put something as tasty as that in front of me without the ability to have some? No fair!! :) Bill
John, that recipe sounds amazing and seems fairly easy. Thank you for sharing as this is definately something Justin would love! --Krystal
Ok..I'm done. Got to try it. My mouth is salivating as we speak!
Your recipe sounds great. I am not much of a cook but I am going to give it a try. Thanks for sharing.
Betty
John/Debbie, I made a green chile stew last week, had serrano chiles and no potatoes, SOOO good! YUM!
John,
I find you to be a healthy addition to us all on ActiveRain. As an Ambassador, it's easy to see why you rose the top as quickly as you did. You are the cream of the crop and I am grateful for all that you do.
WOW...I've never put potato in it before. That sounds good, and would make it extra filling. I also like the crockpot idea. Now that my personal chef works nights, cooking for other people, my crockpot gets quite a workout.
My wife (head cook) has asked that you add your favorite stew recipes. We’ll just turn this into share with the class day :) Hey it might help me get another good home cooked meal....
John Loved the Recipe, I cook in our house hold, when Diane cooks we go out to dinner:) I must make this recipe as soon as it cools down, we are having a heat wave here in Marina Del Rey, heat and humidity...one of the reasons we left the East Coast:)))
John,
You are the man of so many talents my friend. Green Chile Stew would be a big hit in our home only I am a terrible cook and my wife does not have much time for cooking these days. WEe try tio get my step-sons to do the cooking. Recipe sounds and looks wonderful.
That sounds good, John. We had a recipe I posted last night....Shrimp and Artichoke Hearts. Oh, was that good. Good thing there weren't any leftovers!
This looks easy and tasty! I love chili...will have to give this a try. Thanks for sharing John!
John, Oh my that sounds soooo good. I really have to get some Hatch Chiles this year, my freezer is empty! :( I will try the recipe when I have it. For football yesterday I made Chicken Mole, turned out pretty good! Best to you. PS: I like the recipe club idea!!
I LOVE GREEN CHILI STEW :)! I make it every year, but I use beef and lots of garlic and onions. I have to get my Green Chili from HEB here when they have their Hatch Green Chili Festival.
I miss home, sniff...
OK John~ you caught me just as I am about to look for something to fix for dinner....AHA! I have all the ingredients...except...(bet you already knew this) they are ORGANIC..=)
Bookmarked to try- it looks sooooo good... now that it is starting to get chilly here in the northeast your recipe will come in handy. Thanks.
I think I could just about manage that, in a crockpot. I am not a cook, but occasionally something is simle enough and worth the effort, I think I am adding this to the list.
John My husband and I will be right over - chili verde and green chili stew are family favorites, especially in the fall and winter months
This sounds yummy! Now that the weather is cooling down a bit, Albuquerque Green Chille Stew would make a great dinner!
Mmmmm, sounds good John especially on a chilly rainy night!
Hi John -- as Endre commented --- we're in a bit of a heat wave --- so soup will definitely not be on the stovetop or the menu tonight....maybe when it cools down to the 70s or so...
John...
This recipe is timely because I have a pepper overload and I need to make something with them!
This looks so good and sounds incredibly easy. I have to try it!
John,
Wow, that looks great and I will add our favorite chili recipe later on this week or next...We just ate and I am hungry. A
I do love a good stew! I look forward to trying it, I bet it would even add more flavor if I cooked it in a slow cooker.
John: I am mostly vegetarian, so I think the pork could be replaced with carrots?
Thank you guys for checking out our favorite stew and leaving your comments. I hope you each enjoy a restful evening and enjoy a good pot of stew soon :)
Potatoes in chile? WHAT? Okay, I've never heard of that. Okay, the name is green chile stew, so I guess it's allowed, LOL.
That sounds delicious and very easy to prepare. Don't have any NM chiles here so I'll have to make due with Costco. I'm printing this off to use when the weather cools down here in St George. Thanks!
I am copying this one to use over the winter. It looks great. Thanks John.
Hi John, my husband makes "chicken green chili" but this looks like a nice change of pace! Thanks for sharing neighbor!
