Getting Healthy in Langley, B.C. – Meatless Mondays!
Although the vague New Year’s resolution to “be healthier” seems so long ago, the bright spring days have re-sparked an interest at taking a step towards the goal. We’ve decided to try to eat a little healthier and go vegetarian for (at least) one day of the week.
Here’s my recipe for today’s Meatless Monday entree – Curried Lentil Soup. Thanks to Lisa’s Kitchen for the inspiration recipe.
Curried Lentil Soup
1 cup of red, green or yellow lentils (dried)
4 cups of water or vegetable stock (low sodium)
1 medium carrot, dicedhandfull of parsley (roughly chopped)
handfull of spinach or kale (roughly chopped)
Saute:
1 tablespoon olive oil
1 small onion, chopped
1 teaspoon of ground cumin
1 teaspoon of curry powder1/2 teaspoon cayenne (or to taste)
sea salt to taste
freshly cracked black pepper
Combine the lentils and water or vegetable stock in a large pot and bring to a boil. Add the carrots and parsley, reduce the heat to low and cook for 45 minutes or until the lentils are soft and tender, stirring occasionally. Set aside.
Meanwhile, in a frying pan over medium heat, heat the oil and add the onion. Cook until translucent and onion begins to brown. Stir in the spices. Add the mixture to the cooked lentils and simmer for ten minutes, stirring occasionally, adding more water if necessary to achieve the desired consistency. Soup will thicken when cooled, but can be re-heated and thinned by adding a bit of water.
Serves 4 - 6
